Together with Moxon’s Fishmonger in London we created a five course menu, which included Artic char from Dorset, a sweet freshwater fish cooked in a native American style on seasoned wood, Colchester rock oysters shucked and served three ways, a deeply flavourful crustacean bisque, and a kelp infused palate cleanser.
